Description:
Polish cuisine is not a single, unchanging notion. The first Polish cookbook was written
as far back as 1682. Western ways of cooking were already familiar to kitchens of Polish
nobles. For centuries, Polish cuisine had absorbed and adapted French, Italian, Lithuanian
and Jewish dishes and a number of foreign fruits and vegetables brought to Poland by Queen
Bona were widely accepted and incorporated – competing with the native staples of
cabbages, apples and pears.
This rare cookbook, published in the historic city of Kraków, features almost 70 recipes for
starters, mains, desserts, and soups. These include such classics as krupniak (barley
soup), pork cutlets with cabbage, and the famous makowiec (poppy seed cake).
Since this book was produced for the U.S. market, the text is in American English and all
recipes use American cup and Imperial measurements.
